1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

1 tsp Italian seasoning

4 large potatoes, peeled and thinly sliced

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 cup shredded cheddar cheese

1 cup sour cream

1 cup frozen mixed vegetables (peas, corn, carrots)

1/2 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef. Add the diced onion and minced garlic, cooking until the onion is translucent. Drain any excess fat.

      Season the Mixture: Stir in salt, black pepper, paprika, and Italian seasoning. Mix well to combine and then remove from heat.

        Prepare the Potatoes: In a greased 9x13 inch baking dish, lay down half of the sliced potatoes to form a base layer.

          Layer the Ingredients: Spread the cooked beef mixture evenly over the potatoes. Then, layer on the frozen mixed vegetables followed by the remaining sliced potatoes.

            Make the Sauce: In a mixing bowl, combine cream of mushroom soup and beef broth until smooth. Pour this mixture over the layered ingredients in the baking dish, ensuring an even coverage.

              Top with Cheese: Spread sour cream on top of the casserole and then sprinkle shredded cheddar cheese evenly over the entire dish.

                Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes. Afterward, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and cheese is bubbly and golden.
