2 English muffins, split and toasted

4 slices of honey-glazed ham

4 large eggs

4 slices of sharp cheddar cheese

2 tablespoons butter

1 tablespoon mayonnaise (optional)

Freshly ground black pepper, to taste

A pinch of cayenne pepper (optional)

Fresh chives, chopped (for garnish)

Prepare the Muffins: Toast the English muffins until golden brown and crisp. If desired, spread a thin layer of mayonnaise on each half for added flavor.

    Cook the Ham: In a skillet over medium heat, melt 1 tablespoon of butter. Add the ham slices and cook for about 2-3 minutes on each side until warmed and slightly caramelized. Remove from skillet and set aside.

      Fry the Eggs: In the same skillet, add the remaining butter. Crack the eggs into the skillet, one at a time. Cook until the whites are set but the yolks are still runny for sunny-side up eggs, about 2-3 minutes. For over-easy, gently flip the eggs and cook for an additional minute. Season with salt, black pepper, and cayenne pepper, if using.

        Assemble the Sandwich: On the bottom half of each toasted muffin, layer a slice of warm ham, followed by a slice of cheddar cheese. Carefully place the fried egg on top of the cheese to allow it to melt slightly.

          Complete the Sandwich: Finally, add the top half of the English muffin and press down gently.

            Garnish and Serve: Sprink the chopped chives on top for a fresh touch. Serve warm with your favorite side—think crispy hash browns or fresh fruit!
