2 cups mixed vegetables (bell peppers, broccoli, snap peas, and carrots)

1 tablespoon olive oil

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce (low sodium)

1/4 cup teriyaki sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch (optional, for thickening)

2 green onions, sliced (for garnish)

1 teaspoon sesame seeds (for garnish)

Cooked rice or quinoa, for serving

Instructions
 

Cook the Turkey: In a large skillet or wok, heat the olive oil over medium-high heat. Add the ground turkey and cook for about 5-7 minutes, breaking it apart with a spatula until it's browned and cooked through. Drain any excess fat if necessary.

    Add Aromatics: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

      Add Vegetables: Toss in the mixed vegetables and stir-fry for about 3-5 minutes until they are tender-crisp.

        Make the Sauce: In a small bowl, combine the soy sauce, teriyaki sauce, rice vinegar, and sesame oil. If you prefer a thicker sauce, mix in the cornstarch with a tablespoon of water to create a slurry.
