1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

8 oz egg noodles (or your pasta of choice)

Instructions
 

Cook the Noodles: Begin by cooking the egg noodles according to the package instructions. Drain and set aside.

    Brown the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned. Use a wooden spoon to break apart the meat as it cooks, about 5-7 minutes. Once cooked, drain excess fat if necessary and remove the beef from the skillet. Set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onion and cook for about 3-4 minutes until soft and translucent. Add the minced garlic and sliced mushrooms, and sauté for another 5 minutes, until the mushrooms are tender.

        Make the Sauce: Sprinkle the flour over the mushroom mixture and stir to combine. Gradually pour in the beef broth, stirring constantly to avoid lumps. Add the Worcestershire sauce, Dijon mustard, and return the browned ground beef to the skillet.

          Simmer and Thicken: Bring the mixture to a gentle simmer and reduce heat to low. Allow it to cook for about 5 minutes, stirring occasionally, until the sauce thickens.

            Finish with Sour Cream: Remove the skillet from heat and stir in the sour cream until smooth. Taste and adjust seasoning with additional salt and pepper if needed.
