Grilled Salmon Skewers with Creamy Dill Yogurt Sauce

For the Salmon Skewers:

1 pound salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick half-moons

1 small red onion, cut into wedges

Wooden or metal skewers

For the Creamy Dill Yogurt Sauce:

1 cup Greek yogurt

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Marinate the Salmon: In a medium bowl, combine the olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Add the salmon cubes and toss gently to coat. Cover and refrigerate for at least 30 minutes to marinate.

    Prepare the Vegetables: While the salmon is marinating, prepare the vegetables by cutting the red bell pepper, zucchini, and red onion as specified.

      Make the Sauce: In a bowl, mix the Greek yogurt, chopped dill, lemon juice, Dijon mustard, salt, and pepper until well combined. Taste and adjust seasoning if necessary. Refrigerate until ready to serve.

        Assemble the Skewers: Preheat your grill (or grill pan) to medium-high heat. On each skewer, alternate threading salmon cubes with pieces of red bell pepper, zucchini, and red onion. Leave a little space between each piece for even cooking. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for 3-4 minutes on each side, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly charred.

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve the grilled salmon skewers with the creamy dill yogurt sauce drizzled on top or served on the side for dipping.
