8 slices of rye bread

1 cup sauerkraut, drained and pressed

8 ounces corned beef, thinly sliced

8 slices Swiss cheese

1/2 cup Russian or Thousand Island dressing

4 tablespoons unsalted butter, softened

Fresh dill (optional, for garnish)

Instructions
 

Prepare the Bread: Spread 1 tablespoon of softened butter on one side of each slice of rye bread. This will be the outside of your sandwich for grilling.

    Assemble the Sandwich: Lay 4 slices of the buttered rye bread on a clean surface, buttered side down. Spread a generous tablespoon of the dressing on each slice.

      Layer the Ingredients: On each slice, layer the following: a portion of the drained sauerkraut, then slices of corned beef, followed by two slices of Swiss cheese. Top it with another slice of the bread dressed with buttered side facing up.

        Heat the Grill: Preheat a skillet or griddle over medium-low heat.

          Grill the Sandwich: Once the skillet is hot, carefully place the sandwich on it. Grill for about 4-5 minutes or until the bottom is golden brown. Carefully flip the sandwich using a spatula and grill the other side for another 4-5 minutes, pressing slightly to ensure an even melt of the cheese.

            Serve: Once both sides are crispy and the cheese is melted, remove the sandwiches from the heat. Let them sit for a minute before slicing in half.

              Garnish: Optionally, sprinkle with fresh dill before serving. Pair with a side of pickles and chips for the ultimate experience.
