4 firm white fish fillets (such as cod, tilapia, or grouper)

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

4 large russet potatoes

Vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper.

    Marinate the Fish: Place the fish fillets in a shallow dish or a zip-top bag and pour the marinade over them. Ensure the fish is evenly coated. Cover and refrigerate for 30 minutes for the flavors to meld.

      Prepare the Fries: While the fish marinates, peel the russet potatoes and cut them into thin fries, about 1/4 inch thick. Soak the cut fries in cold water for about 30 minutes to remove excess starch. Drain and pat dry with a clean kitchen towel.

        Fry the Fries: In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the dried fries in batches, being careful not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season immediately with salt.

          Grill the Fish: Preheat a grill or grill pan over medium-high heat. Remove the fish from the marinade and place it on the grill. Grill for about 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.

            Serve: Plate the grilled fish alongside a generous portion of crispy fries. Garnish with chopped parsley and serve with lemon wedges on the side.
