4 slices of rustic sourdough bread

6 oz smoked Gouda cheese, grated

1 cup cremini or button mushrooms, sliced

1 medium onion, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

Optional: 1 tablespoon balsamic vinegar for an extra flavor boost

Preheat the Grill Pan: Heat a large grill pan or skillet over medium heat. Add 1 tablespoon of olive oil.

    Sauté the Mushrooms and Onions: Add the sliced mushrooms and onions to the pan. Cook, stirring occasionally, until the mushrooms are golden and the onions are caramelized, about 8-10 minutes. Season with salt, pepper, and thyme. If using, add balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.

      Assemble the Sandwiches: Place two slices of sourdough on a clean surface. Layer half of the grated Gouda on each slice. Next, evenly distribute the sautéed mushrooms and onions over the cheese. Top with the remaining Gouda and place the other slices of bread on top to form two sandwiches.

        Butter the Bread: Spread butter generously on the outside of each sandwich to ensure a golden brown crust.

          Grill the Sandwiches: In the same grill pan, place the sandwiches and grill for about 4-5 minutes on each side, or until the bread is crispy and golden brown and the cheese has melted. You can press down slightly with a spatula for even grilling.
