Green Bean and Mushroom Casserole

Ingredients
  

1 lb fresh green beans, trimmed and cut into 1-inch pieces

8 oz cremini or button mushrooms, sliced

1 medium onion, diced

3 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream

1 cup crispy fried onions (plus extra for topping)

2 cups grated cheddar cheese

2 tbsp olive oil

1 tsp dried thyme

1 tsp salt

½ tsp black pepper

1 tbsp soy sauce

1 tbsp lemon juice

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot of boiling salted water, blanch the green beans for about 3-4 minutes until bright green and slightly tender. Drain and immediately plunge them into ice water to stop the cooking process. Set aside.

      In a large skillet over medium heat, add olive oil. Sauté the diced onion until it becomes translucent, about 5 minutes.

        Add the sliced mushrooms to the skillet, cooking until they're nicely browned, approximately 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

          In a large mixing bowl, combine the blanched green beans, sautéed mushrooms and onions, vegetable broth, heavy cream, soy sauce, lemon juice, dried thyme, salt, and black pepper. Stir well to combine all the ingredients.

            Fold in 1 cup of the grated cheddar cheese and half of the crispy fried onions into the mixture.

              Transfer the green bean and mushroom mixture into a greased 9x13 inch baking dish, spreading it evenly.

                Sprinkle the remaining cheddar cheese and crispy fried onions on top of the casserole.

                  Bake in the preheated oven for 25-30 minutes, until the cheese is bubbly and golden brown on top.
