4 medium green apples, peeled and chopped

1 cup granulated sugar

1 cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon (optional)

Pinch of salt

Instructions
 

In a medium-sized saucepan, combine the chopped green apples, sugar, water, and lemon juice.

    Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to help dissolve the sugar.

      Once simmering, reduce the heat to low and cover the saucepan. Let it cook for about 20-25 minutes until the apples are soft and breaking down.

        Remove the saucepan from heat and allow it to cool slightly.

          Using a fine mesh strainer or cheesecloth, strain the apple mixture into a bowl, pressing down on the solids to extract as much juice as possible. Discard the solids.

            Return the strained liquid to the saucepan and add the vanilla extract, ground cinnamon (if using), and a pinch of salt.

              Cook the syrup over low heat for an additional 10 minutes, allowing it to thicken slightly.

                Remove from heat and let cool completely. Once cooled, transfer the syrup to a clean bottle or jar and store in the refrigerator.
