4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lemon

Zest of 1 lemon

4 medium potatoes, cut into wedges

1 cup Greek yogurt

1 cucumber, grated and drained

1 tablespoon fresh dill, chopped

1 clove garlic, minced (for tzatziki)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, oregano, smoked paprika, salt, pepper, lemon juice, and lemon zest. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes (or up to overnight for deeper flavor).

    Prepare the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the potato wedges with olive oil, salt, pepper, and a squeeze of lemon juice. Spread them evenly on a baking sheet and roast for about 40-45 minutes or until golden brown and crispy, flipping halfway through.

      Cook the Chicken: While the potatoes are roasting, heat a large skillet over medium-high heat. Remove the chicken thighs from the marinade and place them skin-side down in the hot skillet. Sear for about 5-7 minutes until the skin is golden and crispy. Flip the chicken and reduce the heat to medium. Cover and cook for another 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

        Make the Tzatziki: In a mixing bowl, combine the Greek yogurt, grated cucumber (squeezing out excess moisture), chopped dill, minced garlic, salt, and pepper. Mix well, and adjust seasoning to taste. Refrigerate until ready to serve.

          Serve: Serve the crispy chicken thighs with the roasted lemon potatoes. Top the chicken with a generous dollop of tzatziki. Garnish with extra dill and lemon wedges for presentation.
