4 boneless, skinless chicken thighs

2 cups cherry tomatoes, halved

1 cup Kalamata olives, pitted and halved

1 red onion, sliced into wedges

1 bell pepper (red or yellow), sliced

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Feta cheese, crumbled (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the marinade: In a small bowl, whisk together 3 tablespoons of olive oil, lemon zest, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.

      Marinate chicken: Place the chicken thighs in a large bowl or resealable bag, and pour the olive oil mixture over the chicken. Ensure they are well coated in the marinade. Marinate for at least 15 minutes while you prepare the vegetables, or longer if time allows.

        Prepare vegetables: On a large sheet pan, combine the halved cherry tomatoes, Kalamata olives, red onion, and bell pepper. Drizzle with a bit of olive oil, and season with salt and pepper. Toss to coat.

          Add chicken to the pan: Remove the chicken from the marinade and nestle it among the vegetables on the sheet pan.

            Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the vegetables are tender.

              Finish and serve: Remove the sheet pan from the oven. Sprinkle with fresh parsley and crumbled feta cheese. Serve warm with crusty bread or over a bed of rice or quinoa.
