For the Chicken Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 tsp dried oregano

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 egg, lightly beaten

Zest of 1 lemon

2 tbsp olive oil (for cooking)

For the Tzatziki Sauce:

1 cup Greek yogurt (preferably full-fat)

1/2 cucumber, grated (excess water squeezed out)

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp lemon juice

Salt and pepper to taste

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, onion powder, salt, pepper, egg, and lemon zest. Mix until just combined, being careful not to overwork the meat.

      - Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.

        Cook the Meatballs:

          - Heat the olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, ensuring not to overcrowd the pan.

            - Cook for about 4-5 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

              - Once cooked, transfer the meatballs to a plate and cover to keep warm.

                Make the Tzatziki Sauce:

                  - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Mix well until smooth and creamy.

                    - Adjust seasoning according to taste, adding more salt, pepper, or lemon juice if desired.

                      Serve:

                        - Serve the Greek chicken meatballs warm with a generous dollop of homemade tzatziki on the side. These are perfect as an appetizer or served over a fresh Greek salad or wrapped in pita bread.
