4 slices of sourdough bread

6 oz Gouda cheese, sliced

2 cups mixed mushrooms (like cremini and shiitake), cleaned and sliced

1 medium onion, thinly sliced

3 tbsp olive oil

1 tsp fresh thyme leaves

Salt and pepper to taste

2 tbsp butter

Prep the Ingredients: Preheat your oven to 400°F (200°C). Slice the mushrooms and onions as noted.

    Roast the Vegetables: On a baking sheet, toss the sliced mushrooms and onions with olive oil, thyme, salt, and pepper. Spread them out in an even layer and roast in the preheated oven for about 20 minutes, stirring halfway through, until they are golden brown and tender.

      Assemble the Sandwich: While the vegetables are roasting, butter one side of each slice of sourdough bread. On the unbuttered side of two slices, layer a generous amount of Gouda cheese followed by the roasted mushroom and onion mixture. Top with an additional layer of Gouda cheese. Place the remaining slices of bread on top, buttered side up.

        Grill the Sandwich: Heat a large skillet over medium heat. Carefully place the sandwiches in the skillet. Cook for about 3-4 minutes until the bread is golden brown and the cheese begins to melt. Flip the sandwiches and cook the other side for another 3-4 minutes, pressing down gently with a spatula to ensure even grilling.
