500g beef fillet, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

250g mushrooms, sliced (preferably button or cremini)

1 teaspoon Dijon mustard

200ml beef stock

200ml sour cream

1 tablespoon Worcestershire sauce

Salt and black pepper, to taste

Fresh parsley, chopped for garnish

300g egg noodles or tagliatelle

Optional: 1 tablespoon brandy or white wine

Cook the Noodles: Begin by boiling a large pot of salted water. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large frying pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the beef slices with salt and pepper. Once the oil is hot, add the beef in batches (to avoid overcrowding) and sear for about 1-2 minutes until browned but not fully cooked. Remove from pan and set aside.

      Sauté the Aromatics: In the same pan, add the remaining tablespoon of olive oil. Add the chopped onions and garlic, cooking until softened (about 3-4 minutes). Add the sliced mushrooms and cook until they release their moisture and become golden brown, approximately 5-7 minutes.

        Deglaze: If using, pour in the brandy or white wine, scraping the bottom of the pan to release any flavorful bits. Cook for another minute until the liquid is mostly evaporated.

          Create the Sauce: Stir in the Dijon mustard, Worcestershire sauce, and beef stock. Bring to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld together.

            Incorporate the Beef: Return the seared beef along with any juices back to the pan. Lower the heat to medium-low. Stir in the sour cream and mix well until combined. Cook for an additional 3-4 minutes until the beef is fully cooked and the sauce is creamy and heated through. Adjust seasoning with salt and pepper to taste.
