While pre-packaged mac and cheese may offer convenience, it often falls short in flavor and texture compared to its homemade counterpart. Store-bought versions may be quick and easy, but they can't replicate the rich, creamy sauce or the satisfaction that comes from crafting the dish yourself. Homemade mac and cheese allows for personalization; the choice of cheeses, spices, and even toppings can be tailored to suit individual preferences. This versatility not only enhances the taste but also adds a layer of creativity to the cooking process.

Ingredients

8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon mustard powder

1/4 teaspoon paprika (optional, for color)

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (if using breadcrumbs)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 1 minute until bubbly and lightly golden.

Add Milk: Slowly pour in the milk while continuously whisking to avoid lumps. Continue whisking for about 5–7 minutes until the mixture thickens.

Season the Sauce: Stir in garlic powder, onion powder, mustard powder, paprika, salt, and black pepper, mixing well.

Melt the Cheese: Reduce the heat to low, gradually stir in the cheddar and Gruyère cheese until fully melted and the sauce is smooth.

Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce. Stir until the pasta is thoroughly coated with the cheesy goodness.

Optional Breadcrumb Topping: If you want a crunchy topping, preheat your oven to 350°F (175°C). In a small bowl, mix the breadcrumbs with olive oil. Bake the mac and cheese in a greased baking dish for about 20 minutes, adding the breadcrumb mixture on top halfway through.

Serve: Once bubbly and golden (if using breadcrumbs), remove from the oven and let it cool slightly before serving. Enjoy your comforting bowl of homemade mac and cheese!
