Ingredients
  

3 to 4 lbs pork loin roast

1/2 cup honey

1/4 cup soy sauce

3 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon smoked paprika

2 tablespoons olive oil

Fresh rosemary sprigs, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Marinade: In a bowl, whisk together the honey, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, grated ginger, black pepper, salt, and smoked paprika until well combined.

      Marinate the Pork: Place the pork loin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

        Sear the Pork: Heat olive oil in a large oven-safe skillet over medium-high heat. Remove the pork from the marinade (reserve the marinade) and sear it in the hot skillet for about 4-5 minutes on each side until it develops a nice brown crust.

          Bake the Pork: Once seared, pour the reserved marinade over the pork. Transfer the skillet to the preheated oven and roast for approximately 1 hour, or until the internal temperature reaches 145°F (63°C). Baste the pork with the pan juices every 20 minutes for extra flavor.

            Let it Rest: Once cooked, remove the pork from the oven and cover it with aluminum foil. Let it rest for about 10 minutes to allow the juices to redistribute.

              Slice and Serve: Slice the pork roast into thick slices and serve with the pan drippings drizzled on top. Garnish with fresh rosemary sprigs if desired.
