Ingredients

For the Gingerbread Pancakes:

1 cup all-purpose flour

1 tablespoon brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons molasses

1 tablespoon melted butter

Cooking spray or additional butter for the pan

For the Spiced Syrup:

1 cup maple syrup

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon ground allspice

1/4 teaspoon vanilla extract

Instructions

Prepare the Pancake Batter:

    - In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, ginger, cinnamon, nutmeg, cloves, and salt until well combined.

      - In another bowl, mix the buttermilk, egg, molasses, and melted butter until smooth.

        - Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Make the Spiced Syrup:

            - In a small saucepan, combine the maple syrup, cinnamon, ginger, allspice, and vanilla extract.

              - Heat over low-medium heat, stirring occasionally until warmed through and fragrant. Keep warm while you make the pancakes.

                Cook the Pancakes:

                  - Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.

                    - For each pancake, pour 1/4 cup of the batter onto the skillet.

                      - Cook until bubbles form on the surface and the edges appear set (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown and cooked through.

                        - Repeat with the remaining batter, adjusting the heat as necessary.

                          Serve:

                            - Stack the pancakes on a plate and drizzle generously with the warm spiced syrup.

                              - Optional: Add whipped cream, chopped nuts, or a sprinkle of powdered sugar for an extra touch.
