Ingredients
  

4 cod fillets (6 ounces each)

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey

2 tablespoons fresh ginger, grated

2 cloves garlic, minced

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon cornstarch (optional, for thickening)

1 tablespoon water (if using cornstarch)

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, rice vinegar, and sesame oil until fully combined. If you prefer a thicker glaze, mix the cornstarch with water to create a slurry and add it to the marinade.

    Marinate the Cod: Place the cod fillets in a shallow dish and drizzle half of the ginger soy marinade over them. Make sure the fillets are evenly coated. Cover and let them marinate in the refrigerator for 30 minutes.

      Preheat the Oven: While the cod is marinating, preheat your oven to 400°F (200°C).

        Sauté the Cod: Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the cod from the marinade (reserve the marinade) and season with a pinch of salt and pepper. Once the oil is hot, carefully place the fillets in the skillet and sear for about 2-3 minutes on each side, or until they are golden brown.

          Add the Marinade: After searing the cod, pour the reserved marinade over the fish. If you like, you can add a bit of the marinade to the skillet to deglaze it, scraping up any flavorful bits stuck to the bottom.

            Bake the Cod: Transfer the skillet to the preheated oven and bake for about 8-10 minutes, or until the cod is cooked through and flakes easily with a fork.

              Garnish and Serve: Remove the skillet from the oven and let the cod rest for a minute. Garnish with chopped green onions and sesame seeds before serving.
