400g spaghetti or tonnarelli

200g Pecorino Romano cheese, finely grated

2 teaspoons freshly cracked black pepper

4 cups salted pasta water (about 1 cup reserved)

2 tablespoons unsalted butter (optional for extra creaminess)

Salt (to taste)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Pasta: In a large pot, bring 4 cups of salted water to a boil. Add spaghetti or tonnarelli and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the rest.

    Toast the Pepper: In a large skillet over medium heat, add the freshly cracked black pepper. Toast the pepper for about 1 minute, stirring often, until it becomes fragrant but not burnt.

      Combine Cheese and Pasta: Reduce the heat to low and quickly add the hot pasta to the skillet with the pepper. Toss to coat the pasta in the pepper.

        Add Cheese and Water: Gradually add the finely grated Pecorino Romano cheese, tossing continuously. Add reserved pasta water, a little at a time, to create a creamy sauce. If using, incorporate the unsalted butter for extra creaminess. Keep tossing until the cheese melts and the sauce clings to the pasta. Adjust the consistency with more pasta water if needed.

          Season and Serve: Taste and adjust the seasoning with more salt if necessary. Plate the pasta, garnishing with additional cheese, cracked pepper, and chopped parsley, if desired.
