Ingredients
  

1 medium head of cauliflower, cut into florets

8 oz (225g) mushrooms, halved or quartered (depending on size)

1/4 cup olive oil

6 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the cauliflower florets and mushrooms.

      Make the Garlic Mixture: In a small bowl, whisk together the olive oil, minced garlic, dried thyme, smoked paprika, red pepper flakes, salt, and pepper.

        Combine: Pour the garlic mixture over the veggies and toss until well coated.

          Spread on Baking Sheet: Spread the cauliflower and mushrooms in a single layer on a large baking sheet lined with parchment paper.

            Roast: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, stirring halfway through, until the vegetables are golden and tender.

              Garnish & Serve: Remove the vegetables from the oven, sprinkle with fresh parsley, and serve with lemon wedges on the side for an extra zing.
