Ingredients

1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

1/2 cup butter (1 stick)

1 cup heavy cream

1 cup grated Gruyère cheese

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 tablespoon fresh parsley, chopped

1 teaspoon red pepper flakes (optional, for spice)

Salt and pepper, to taste

1 tablespoon lemon juice

1 teaspoon lemon zest

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C).

Prepare the shrimp: In a large skillet over medium heat, melt 2 tablespoons of the butter. Add the garlic and sauté for about 1 minute until fragrant but not browned.

Cook the shrimp: Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes. Season with salt, pepper, and red pepper flakes if using. Stir in the lemon juice and zest, then remove from heat.

Make the sauce: In a medium saucepan, melt the remaining butter over medium heat. Whisk in the heavy cream and bring to a gentle simmer. Stir in the Gruyère and Parmesan cheese, and season with salt and pepper. Keep stirring until the cheeses have melted and the mixture is smooth.

Combine: In a large mixing bowl, carefully combine the shrimp mixture with the cheese sauce and half of the fresh parsley.

Prepare the baking dish: Transfer the shrimp and cheese mixture into a greased baking dish, spreading it out evenly.

Top with breadcrumbs: In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil and the remaining parsley. Sprinkle this mixture evenly over the shrimp and cheese.

Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the top is golden brown and bubbly.

Serve: Once out of the oven, let it cool for a few minutes. Garnish with additional parsley if desired. Serve hot, and enjoy your delicious garlic shrimp gratin!
