For the Garlic Pork Chops:

4 bone-in pork chops (about 1 inch thick)

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 teaspoon smoked paprika

Salt and pepper to taste

Zest of 1 lemon

Juice of 1 lemon

For the Decadent Cheesy Potatoes:

4 medium russet potatoes, peeled and cubed

1 cup heavy cream

1 cup sharp cheddar cheese, shredded

½ cup parmesan cheese, grated

2 tablespoons butter

1 teaspoon garlic powder

Salt and pepper to taste

¼ cup green onions, sliced (for garnish)

Instructions
 

Prepare the Cheesy Potatoes:

    - Preheat the oven to 375°F (190°C).

      - Place the cubed potatoes in a large pot of salted water and bring to a boil. Cook for about 10-12 minutes, or until just tender. Drain and set aside.

        - In a mixing bowl, combine the heavy cream, garlic powder, salt, and pepper. Stir in the cheddar and parmesan cheeses.

          - In a greased baking dish, layer the cooked potatoes and pour the cheese mixture over them. Dot with butter on top.

            - Bake in the preheated oven for about 25-30 minutes, until golden and bubbly.

              Prepare the Garlic Pork Chops:

                - While the potatoes are baking, in a small bowl, mix together minced garlic, olive oil, rosemary, smoked paprika, lemon zest, lemon juice, salt, and pepper to create a marinade.

                  - Rub the marinade generously over each pork chop and let them sit for about 15-20 minutes to absorb the flavors.

                    - Heat a large skillet over medium-high heat. Add a drizzle of olive oil to the skillet.

                      - Once hot, sear the pork chops for 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C) and have a nice golden crust.

                        - Remove from the skillet and let them rest for a few minutes before serving.

                          Serve:

                            - Place the cheesy potatoes on a plate and top with a flavorful garlic pork chop. Garnish with sliced green onions for added freshness.
