1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

2 cups vegetable or chicken broth

1/2 cup grated Parmesan cheese

1/4 cup cream (optional for extra creaminess)

1 cup fresh spinach, chopped

Salt and pepper to taste

1 teaspoon dried Italian herbs (or fresh if available)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

    Add the orzo pasta to the pan, stirring well to coat the orzo with the garlic oil for about 1-2 minutes.

      Slowly pour in the vegetable or chicken broth, and add the dried Italian herbs. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 8-10 minutes, or until the orzo is tender and has absorbed most of the liquid, stirring occasionally.

        Once the orzo is cooked, stir in the grated Parmesan cheese and cream (if using), mixing until creamy. If it appears too thick, add a little more broth or water.

          Fold in the chopped spinach and cook for an additional 2 minutes, just until the spinach wilts. Season with salt and pepper to taste.

            Remove from heat, and let it sit for a minute before serving. Garnish with fresh parsley and serve with lemon wedges on the side for an added zest.
