1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, minced garlic, oregano, thyme, paprika, salt, and black pepper. Add the chicken cubes and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: If using wooden skewers, soak them in water for about 15 minutes to prevent burning. Preheat your grill or grill pan to medium-high heat.

      Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the chicken skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

          Add the Parmesan: During the last minute of grilling, sprinkle the grated Parmesan cheese over the skewers and close the lid to allow the cheese to melt.
