Ingredients
  

1 lb chicken breast, cut into 1-inch cubes

1/4 cup olive oil

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional, for heat)

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, minced garlic, grated Parmesan cheese, oregano, thyme, red pepper flakes, lemon juice, salt, and pepper. Mix well to create the marinade.

    Add Chicken: Add the cubed chicken breast to the marinade. Toss until the chicken is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare Skewers: If you're using bamboo skewers, soak them in water for about 30 minutes to prevent burning on the grill. Preheat the grill to medium-high heat.

        Assemble Skewers: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Garnish and Serve: Once done, remove the skewers from the grill. Sprinkle with chopped fresh parsley and additional grated Parmesan, if desired. Serve warm.
