1 lb baby potatoes, halved

1 lb baby carrots, trimmed and peeled

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried rosemary

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the halved baby potatoes and trimmed baby carrots.

      In a separate small bowl, whisk together the minced garlic, olive oil, rosemary, thyme, oregano, salt, and pepper.

        Pour the herb-garlic mixture over the potatoes and carrots. Toss well to ensure that the vegetables are evenly coated.

          Spread the coated vegetables in a single layer on a large baking sheet. Make sure they are not overcrowded for even roasting.

            Roast in the preheated oven for 25-30 minutes, or until the vegetables are golden brown and tender, stirring halfway through the cooking time.
