1 whole chicken (4-5 lbs)

1 stick (1/2 cup) unsalted butter, softened

5 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon lemon zest

Salt and pepper, to taste

1 lemon, quartered

1 onion, quartered

4-5 carrots, cut into chunks

2 cups chicken broth

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Herb Butter: In a mixing bowl, combine the softened butter, minced garlic, rosemary, thyme, parsley, lemon zest, salt, and pepper. Mix until well blended.

      Prepare the Chicken: Pat the chicken dry with paper towels, ensuring that the skin is dry for a crisp finish. Gently loosen the skin on the chicken breast and thighs with your fingers, being careful not to tear it.

        Apply the Herb Butter: Take half of the herb butter mixture and rub it directly onto the chicken meat underneath the skin. Spread the remaining butter all over the outside of the chicken.

          Stuff the Chicken: Stuff the cavity of the chicken with the quartered lemon and onion for added flavor.

            Prepare the Vegetables: In a large roasting pan, arrange the chopped carrots at the bottom. Place the chicken on top of the vegetables.
