4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 cup green olives, pitted and halved (preferably Castelvetrano)

1/2 cup cherry tomatoes, halved

1/2 cup chicken broth

1/4 cup extra virgin olive oil

1 tbsp fresh lemon juice

1 tsp dried oregano

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and dried oregano on both sides. Let them marinate for about 15 minutes for added flavor.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook for about 5–6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it. Add the cherry tomatoes and sauté for another 2-3 minutes until they start to soften.

        Combine Ingredients: Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to deglaze. Add the halved olives to the skillet and stir well to combine.

          Simmer Together: Return the chicken thighs to the skillet, nestling them in the mixture. Cover the skillet and let it simmer for an additional 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
