1 lb sirloin steak, cut into bite-sized pieces

2 cups baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

2 tablespoons olive oil

Chopped parsley, for garnish

Prep the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet and roast in the oven for about 20-25 minutes, or until golden brown and crispy, flipping halfway through.

    Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add the remaining 1 tablespoon of olive oil. Once hot, add the steak bites in a single layer. Cook for 2-3 minutes without stirring to get a nice sear, then flip and cook for an additional 2 minutes for medium-rare. Season the steak with salt and pepper.

      Make the Garlic Butter: Reduce the heat to medium and push the steak bites to one side of the skillet. Add the butter, minced garlic, rosemary, and thyme to the empty side. Let the butter melt and the garlic sauté for about 1 minute, then mix everything together and cook for another minute to infuse the flavors.

        Serve: Once the potatoes are crispy and the steak bites are cooked, plate them together. Drizzle the garlic butter mixture over the steak and potatoes. Garnish with chopped parsley before serving.
