Ingredients
  

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

Salt and pepper, to taste

1 teaspoon smoked paprika

2 lbs Yukon gold potatoes, peeled and cubed

½ cup milk

½ cup sour cream

2 tablespoons olive oil

Chives, chopped for garnish (optional)

Instructions
 

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the cubed Yukon gold potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

    Mash the Potatoes: In the same pot, add the cooked potatoes, milk, sour cream, and 2 tablespoons of butter. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

      Sear the Steak Bites: In a large skillet, heat olive oil over medium-high heat. Season steak cubes with salt, pepper, and smoked paprika. Once the skillet is hot, add the steak bites in a single layer. Sear for 2-3 minutes on each side, or until browned and cooked to your preferred doneness. Remove the steak from the skillet and set aside.

        Make the Garlic Butter Sauce: Reduce the heat to medium. In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for 30 seconds, or until fragrant. Return the steak bites to the skillet and toss to coat in the garlic butter. Stir in the chopped parsley and mix well.

          Serve: To plate, create a bed of the creamy mashed potatoes, then top with the garlic butter steak bites. Drizzle any remaining garlic butter sauce over the top, and sprinkle with chopped chives if desired.
