Ingredients
  

1 pound sirloin steak, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper, to taste

2 pounds potatoes, peeled and cubed

1/2 cup heavy cream

1/4 cup sour cream

1/2 cup chopped fresh parsley (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, add the cubed potatoes and cover them with water. Bring to a boil over high heat. Once boiling, reduce the heat to medium and cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Make the Mashed Potatoes: Add the heavy cream, sour cream, salt, and black pepper to the drained potatoes. Use a potato masher or hand mixer to mash until smooth and creamy. Adjust seasoning to taste. Keep warm while you prepare the steak bites.

      Sear the Steak Bites: In a large skillet over medium-high heat, add 2 tablespoons of butter. Once melted and hot, add the steak bites in a single layer (you may need to do this in batches) and season with smoked paprika, salt, and pepper. Sear for about 2-3 minutes until browned on all sides. Remove the steak from the skillet and set aside.

        Prepare the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Add in the minced garlic and cook for about 1 minute until fragrant, making sure not to burn it.

          Combine Steak and Garlic Butter: Return the seared steak bites to the skillet and toss to coat them in the garlic butter sauce. Sprinkle with dried thyme, and cook for an additional 1-2 minutes to heat through.

            Serve: On a large plate, serve a generous helping of mashed potatoes topped with the garlic butter steak bites. Drizzle with any remaining garlic butter from the skillet. Garnish with chopped fresh parsley for color and flavor.
