1 lb (450g) beef sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

Salt and pepper, to taste

2 tablespoons olive oil

For the Creamy Mash:

2 lbs (900g) russet potatoes, peeled and diced

1/2 cup (120ml) heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

1/4 cup (60ml) milk (adjust for desired creaminess)

Optional: chopped chives for garnish

Instructions
 

Prepare the Potatoes:

    - Place the diced potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

      Make the Creamy Mash:

        - Drain the potatoes and return them to the pot. Add the butter and heavy cream. Mash the potatoes using a potato masher or ricer until smooth. Gradually stir in the milk until you reach your desired creaminess. Season with salt and pepper. Keep warm.

          Cook the Steak Bites:

            - While the potatoes are cooking, heat the olive oil in a large skillet over medium-high heat. Once hot, add the steak bites in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on each side for medium-rare, or longer for your desired doneness. Avoid crowding the pan; cook in batches if necessary.

              Add Garlic Butter:

                  Serve:
