12 lasagna noodles

1 lb (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (plus more for garnish)

Salt and pepper, to taste

1 cup spinach, roughly chopped (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

      Prepare the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant. Add the shrimp, cooking for 3-4 minutes until they turn pink. Remove the shrimp from the skillet and set aside.

        Make the Garlic Butter Sauce: In the same skillet, pour in the chicken broth and bring to a simmer. Stir in the heavy cream, remaining butter, and bring to a gentle boil, stirring frequently. Cook for about 5 minutes until slightly thickened. Add lemon juice, 1/2 cup of Parmesan cheese, and mix well. Season with salt and pepper to taste.

          Assemble the Lasagna: In a 9x13 inch (23x33 cm) baking dish, spread a layer of the garlic butter sauce on the bottom. Place 3 lasagna noodles over the sauce. Layer half the shrimp on top, followed by a layer of spinach (if using), followed by shredded mozzarella cheese. Repeat the layers: sauce, noodles, shrimp, spinach, and mozzarella.

            Finish with Cheese: Once you have your last layer of noodles, pour the remaining garlic butter sauce over the top and sprinkle with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the lasagna with aluminum foil (to prevent sticking) and bake in the oven for 25 minutes. Remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden on top.

                Garnish and Serve: Remove the lasagna from the oven and let it sit for about 10 minutes before slicing. Garnish with fresh chopped parsley and serve warm.
