Garlic Butter Scallops and Shrimp

1 pound large shrimp, peeled and deveined

1 pound sea scallops, patted dry

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

1/4 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Seafood: Ensure the scallops are thoroughly dried with paper towels. This helps achieve a beautiful sear. Season the shrimp and scallops lightly with salt and pepper.

    Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium-high heat until it’s bubbling.

      Sear the Scallops: Add the scallops to the pan in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until they’re golden brown and cooked through. Remove the scallops from the skillet and set aside.

        Cook the Shrimp: In the same skillet, add another 2 tablespoons of butter and garlic. Sauté the garlic for about 30 seconds until fragrant, making sure not to let it burn.

          Combine Shrimp and Scallops: Add the shrimp to the skillet and cook for about 2-3 minutes or until they’re pink and opaque. Stir in the lemon zest, lemon juice, and red pepper flakes (if using).

            Return Scallops to Skillet: Add the seared scallops back into the skillet, gently tossing everything together to combine. Cook for an additional minute to heat through.

              Serve: Remove from heat and sprinkle with freshly chopped parsley. Transfer to plates and serve with lemon wedges for extra brightness.
