1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

8 oz (225g) pasta (fettuccine or penne works great)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Prepare the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining tablespoon of butter. Once melted, add minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

        Combine Chicken and Sauce: Add the cooked chicken back into the skillet and toss to coat in the garlic butter sauce. If using spinah, stir it in now and let it wilt slightly. Set aside.

          Prepare the Creamy Parmesan Sauce: In a different saucepan over medium heat, combine the heavy cream and bring to a gentle simmer. Gradually whisk in the Parmesan cheese until smooth and creamy. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.

            Mix Pasta and Sauce: Add the drained pasta to the creamy Parmesan sauce, tossing to coat evenly. If the pasta seems dry, add a bit more pasta water to loosen it up.

              Serve: Divide the creamy Parmesan pasta among plates. Top with the garlic butter chicken bites. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan if desired.
