For the Garlic Butter Beef Chops:

4 beef chops (about 1 inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon lemon juice

For the Cheesy Potato Bake:

4 large russet potatoes, peeled and thinly sliced

1 cup shredded cheddar cheese

1 cup milk

1/2 cup heavy cream

2 tablespoons butter, melted

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Cheesy Potato Bake:

    - Preheat your oven to 375°F (190°C).

      - In a large bowl, combine the sliced potatoes, melted butter, milk, heavy cream, garlic powder, smoked paprika, salt, and pepper. Mix well until all potatoes are evenly coated.

        - Grease a 9x13 inch baking dish and layer half of the potato mixture in it. Sprinkle half of the cheddar cheese over the potatoes.

          - Add the remaining potato mixture and top with the remaining cheddar cheese and Parmesan cheese.

            - Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 15-20 minutes, or until the top is golden brown and the potatoes are tender.

              Cook the Garlic Butter Beef Chops:

                - While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.

                  - Season the beef chops with salt and pepper on both sides. Add the chops to the skillet and sear for about 4-5 minutes on each side, or until they reach your desired level of doneness.

                    - In a separate small saucepan, melt the butter over medium-low heat. Add the minced garlic, rosemary, thyme, and lemon juice, stirring until the garlic is fragrant (about 1-2 minutes).

                      - Once the beef chops are cooked, drizzle the garlic butter mixture over them in the skillet and let it rest for a few minutes.

                        Serve:

                          - Plate the garlic butter beef chops alongside a generous serving of cheesy potato bake. Top with fresh parsley if desired.
