Garlic and Spinach Stuffed Pasta Shells

Ingredients
  

20 jumbo pasta shells

2 cups fresh spinach, chopped

3 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water and cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Spinach Filling: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and let it cool slightly.

        Mix the Filling: In a bowl, combine the cooked spinach and garlic with ricotta cheese, half of the mozzarella cheese, Parmesan cheese, oregano, salt, and pepper. Stir until well mixed.

          Stuff the Shells: Take a spoonful of the spinach and cheese mixture and fill each pasta shell. Place the stuffed shells in a greased baking dish.

            Add Sauce: Pour marinara sauce evenly over the stuffed shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm.
