1 cup (2 sticks) unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup Biscoff spread (cookies and butter)

1 cup white chocolate chips

Extra crushed Biscoff cookies for topping

Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until well mixed and smooth.

      Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract until fully incorporated.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

            Gently fold in the Biscoff spread and white chocolate chips, ensuring they are evenly distributed throughout the batter.

              Pour the batter into the prepared baking dish and spread it out evenly. Crumble extra Biscoff cookies on top for added crunch.

                Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs (not completely clean).

                  Allow the blondies to cool in the pan for about 15 minutes before lifting them out using the parchment overhang. Transfer to a wire rack to cool completely before cutting into squares.
