1 pound fresh green beans, trimmed

4 ounces cooked ham, diced

1 cup radish greens, washed and roughly chopped

1/2 cup all-purpose flour

1/4 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 large eggs, beaten

1/4 cup milk

Vegetable oil for frying

Lemon wedges for serving (optional)

Instructions
 

Prepare the Green Beans: Fill a large pot with salted water and bring it to a boil. Add the green beans and blanch for 3-4 minutes until vibrant green and tender-crisp. Drain and immediately transfer to an ice bath to stop cooking. Once cool, drain again and pat dry.

    Make the Breading: In one bowl, combine the flour, cornmeal, garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, whisk together the beaten eggs and milk.

      Coat the Beans: Dredge each green bean first in the flour mixture, then dip them into the egg mixture, and finally coat them again in the flour mixture for extra crunch. Set aside on a baking sheet.

        Fry the Ham & Greens: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Once hot, add the diced ham and cook until browned and crispy, about 3-4 minutes. Add the chopped radish greens and sauté until wilted, about 2 minutes. Remove the mixture from the skillet and set aside.

          Fry the Green Beans: In the same skillet, carefully add the coated green beans in batches, frying them for 3-5 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer the fried green beans to a paper towel-lined plate to drain any excess oil.

            Combine and Serve: Toss the crispy green beans with the sautéed ham and radish greens in a large bowl. Season with additional salt and pepper to taste. Serve immediately with lemon wedges on the side for a zesty kick.
