4 ears of fresh corn, husked and cleaned

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Vegetable oil, for frying

Optional toppings: grated Parmesan cheese, chili powder, chopped fresh herbs, lime wedges

Instructions
 

Soak the Corn: In a large bowl, soak the husked corn in buttermilk for at least 30 minutes. This helps tenderize the corn and adds flavor.

    Prepare the Coating: In another bowl, combine the flour, cornmeal, paprika, garlic powder, cayenne pepper, salt, and pepper. Mix well to combine all dry ingredients evenly.

      Heat the Oil: In a deep skillet or large pot, pour enough vegetable oil to fill about 2 inches deep. Heat the oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Corn: After soaking, remove the corn from the buttermilk and allow any excess to drip off. Roll the corn in the flour mixture, ensuring it’s thoroughly coated.

          Fry the Corn: Carefully place each coated ear of corn into the hot oil, frying two or three at a time to avoid overcrowding. Fry for about 3-5 minutes, turning occasionally, until they are golden brown and crispy.

            Drain and Serve: Once fried, remove the corn from the oil and place on a plate lined with paper towels to drain excess oil. Repeat with remaining corn.

              Add Toppings (Optional): While still hot, sprinkle the fried corn with grated Parmesan cheese, chili powder, or fresh herbs as desired. Serve with lime wedges on the side for a refreshing twist.
