Ingredients
  

2 pieces of fresh cod fillets (6 oz each)

1 cup buttermilk

1 cup all-purpose flour

1 cup cornmeal

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

Vegetable oil (for frying)

4 brioche burger buns

1 cup shredded lettuce

1 medium tomato, sliced

1/2 cup tartar sauce

Lemon wedges (for serving)

Instructions
 

Marinate the Cod:

    - Place the cod fillets in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes in the refrigerator to enhance flavor and tenderness.

      Prepare the Breading:

        - In a shallow dish, mix together the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. This mixture will give the cod a crispy coating.

          Heat the Oil:

            - In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat. You can test if the oil is hot enough by dropping a small piece of bread in; it should sizzle immediately.

              Coat the Cod:

                - Once marinated, take the cod fillets out of the buttermilk, allowing any excess to drip off. Dredge each fillet in the breading mixture, ensuring an even coat. Shake off any excess.

                  Fry the Cod:

                    - Carefully place the coated fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).

                      Assemble the Sandwich:

                        - Toast the brioche buns lightly if desired. Spread a generous amount of tartar sauce on the bottom half of each bun. Place a crispy cod fillet on top, add a handful of shredded lettuce, and a slice of tomato. Spread a bit more tartar sauce on the top half of the bun and place it on top.

                          Serve:
