Ingredients
  

1 lb thinly sliced beef sirloin

2 large onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth

1 tsp thyme leaves (fresh or dried)

1 tbsp olive oil

4 oz cream cheese, softened

1 cup shredded Gruyère cheese

1/4 cup chopped fresh parsley

Salt and pepper to taste

1 package of large tortillas or flatbread

Optional: Balsamic glaze for drizzling

Caramelize the Onions: In a large skillet over medium heat, heat the olive oil. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are soft and caramelized. Add minced garlic and thyme in the last 5 minutes of cooking. Season with salt and pepper. Once done, remove from heat and set aside.

    Prepare Beef Roll-Ups: While the onions are caramelizing, place the thinly sliced beef between two layers of plastic wrap and pound gently with a meat mallet to an even thickness (approximately 1/4 inch).

      Fill and Roll: Preheat your oven to 375°F (190°C). On a clean platter, lay out the beef slices. Spread a thin layer of cream cheese over each slice and then add a generous spoonful of the caramelized onion mixture. Sprinkle with shredded Gruyère cheese and a pinch of parsley.

        Roll: Carefully roll each beef slice tightly from one end to the other. Secure with toothpicks if necessary.

          Sear the Roll-Ups: In the same skillet used for the onions, heat a little more olive oil over medium-high heat. Sear each roll-up for about 2-3 minutes on each side until browned.

            Bake: Transfer the seared roll-ups to a baking dish, pour beef broth over them, and cover with foil. Bake in the preheated oven for 15-20 minutes, or until the beef is tender and cooked through.

              Serve: Remove from the oven and let rest for a few minutes. Drizzle with balsamic glaze if desired, sprinkle with additional parsley, and serve warm.
