Ingredients
  

4 everything bagels, halved

4 slices of bacon

4 slices of smoked ham

4 slices of spicy Italian sausage

4 slices of turkey breast

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

1 cup crumbled blue cheese

4 large eggs

Salt and black pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Cook the Meats: In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add the sliced ham, sausage, and turkey breast; cook until heated through and slightly crispy on the edges. Remove and set aside.

    Prepare the Eggs: In a bowl, crack the eggs and whisk them with a pinch of salt and black pepper. In a clean skillet, scramble the eggs over medium-low heat until just set, about 4-5 minutes. Remove from heat.

      Toast the Bagels: While the eggs cook, preheat your oven to broil. Place the bagel halves on a baking sheet, cut side up, and broil for about 2-3 minutes until golden brown. Keep an eye on them to prevent burning!

        Assemble the Sandwich: On the bottom half of each toasted bagel, layer the meats: start with bacon, followed by ham, sausage, and turkey. Top with scrambled eggs and a generous handful of each cheese—sprinkle cheddar, mozzarella, feta, and blue cheese for a melty mixture.
