Ingredients

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

1/3 cup soy sauce (low sodium preferred)

1/3 cup brown sugar

2 tablespoons apple cider vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1/2 teaspoon ground black pepper

1/4 teaspoon red pepper flakes (adjust to taste)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

In a large skillet or wok, heat vegetable oil over medium-high heat.

Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

Toss in the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.

In a medium bowl, whisk together the soy sauce, brown sugar, apple cider vinegar, black pepper, and red pepper flakes.

Pour the sauce over the cooked chicken. Stir to combine and bring to a simmer.

Add the cornstarch slurry to the skillet, stirring continuously until the sauce thickens, about 2-3 minutes.

Once thickened, remove from heat and let it cool for a minute to allow the flavors to meld.

Serve the bourbon chicken over steamed rice or noodles for a complete meal, and garnish with chopped green onions and sesame seeds.
