1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk, at room temperature

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract (optional)

Maple syrup and fresh berries, for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract (if using) until thoroughly combined.

      Pour the wet ingredients into the dry ingredients and stir gently with a spatula. Be careful not to overmix; it's okay if there are a few lumps.

        Let the batter rest for about 5-10 minutes. This helps to make the pancakes fluffier.

          Heat a non-stick skillet or griddle over medium heat and add a little butter. Allow it to melt and spread it around to ensure an even cooking surface.

            Once the skillet is hot, ladle about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

              Carefully flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through. For crispy edges, allow the pancakes to cook a little longer on each side.
