12 ounces rotini pasta

1 can (10 ounces) diced tomatoes with green chilies (RoTel)

1 can (15 ounces) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced bell peppers (any color)

1 small onion, diced

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

2 tablespoons olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Stir in the garlic and bell peppers, cooking for an additional 3-4 minutes until softened.
