1 lb ground beef

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (or homemade)

1 cup salsa (mild, medium, or spicy)

1 cup shredded cheese (cheddar or Mexican blend)

4 large flour tortillas

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sour cream (optional)

Instructions
 

Sauté the Aromatics: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and bell pepper. Sauté until soft, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant.

    Cook the Beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.

      Season the Mixture: Stir in the taco seasoning until the beef is evenly coated. Mix in the cooked rice, black beans, corn, and half of the salsa. Cook for an additional 3-4 minutes until heated through.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous portion of the beef mixture into the center. Sprinkle some shredded cheese on top. Add a few slices of avocado and a spoonful of salsa.

          Wrap it Up: Fold the sides of the tortilla over the filling, and then roll from the bottom up to form a tightly sealed burrito. Repeat this process for the remaining tortillas.

            Grill (Optional): For a crispy finish, heat a skillet over medium heat, and lightly oil it. Place the burritos seam-side down and grill for about 3 minutes on each side until golden brown and crispy.

              Serve: Slice the burritos in half if desired, and serve warm with lime wedges, cilantro, and sour cream on the side.
