Ingredients

1.5 lbs pork tenderloin

1 cup fresh spinach, chopped

1 cup cranberries, dried

1 cup walnuts, toasted and chopped

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp fresh rosemary, finely chopped

1 tsp fresh thyme, finely chopped

1/2 tsp ground cinnamon

Salt and pepper to taste

2 tbsp olive oil

1/2 cup chicken broth

1/4 cup balsamic vinegar

2 tbsp honey

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Stuffing: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onions are translucent. Add the fresh spinach, dried cranberries, walnuts, rosemary, thyme, cinnamon, salt, and pepper. Cook for an additional 3-4 minutes until the spinach is wilted. Remove from heat and let it cool.

Prepare the Pork Tenderloin: With a sharp knife, carefully butterfly the pork tenderloin by slicing it lengthwise, stopping about 1 inch from the edge so it remains intact. Open it up and pound it gently to even out the thickness.

Stuff the Pork: Spread the cooled stuffing evenly over the inside of the pork tenderloin. Roll it tightly, starting from one end, and secure it with kitchen twine or toothpicks.

Sear the Tenderloin: In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the stuffed pork tenderloin on all sides until it’s nicely browned, about 3-4 minutes per side.

Roast in the Oven: Transfer the seared tenderloin to a baking dish. In a small bowl, mix together the chicken broth, balsamic vinegar, and honey. Pour the mixture over the pork. Cover with foil and roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

Rest and Slice: Remove the tenderloin from the oven and let it rest for 10 minutes before slicing it into medallions.

Serve: Arrange the slices on a festive platter and drizzle with the pan sauce for added flavor.

                  Prep Time: 20 minutes | Total Time: 1 hour | Servings: 6

Enjoy this indulgent and festive dish at your Christmas dinner table for a truly delightful experience!
