Ingredients

1 lb flank steak, thinly sliced against the grain

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

3 cloves garlic, minced

1 teaspoon ginger, minced

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon rice vinegar

1 tablespoon sugar

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for spice)

2 green onions, chopped (for garnish)

Cooked jasmine rice or steamed rice (for serving)

Instructions

Prepare the Flank Steak: In a medium bowl, toss the sliced flank steak with cornstarch until well coated. This helps to tenderize the meat and create a nice texture when cooked.

Marinate the Beef: In another bowl, mix together the soy sauce, oyster sauce, rice vinegar, sugar, black pepper, and red pepper flakes (if using). Add the coated flank steak to this marinade, ensuring all pieces are covered. Let it marinate for at least 20 minutes, or up to 1 hour for better flavor.

Sauté the Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onions and bell peppers, stir-frying for about 3-4 minutes until they start to soften but still retain their crunch. Add the minced garlic and ginger, and continue to stir-fry for another minute until fragrant. Remove the vegetables from the skillet and set aside.

Cook the Steak: In the same skillet, add the remaining tablespoon of oil. Increase the heat to high and add the marinated flank steak (discarding excess marinade). Cook for 3-5 minutes, stirring constantly, until the steak is browned and cooked through.

Combine Everything: Return the sautéed vegetables to the skillet with the cooked steak, and toss everything together to combine. Allow it to cook together for another minute so the flavors meld.

Serve: Spoon the flavorful pepper steak over a bed of jasmine rice or steamed rice. Garnish with chopped green onions. Enjoy your delicious creation!
